Harvested in small batches by a dedicated couple of saulniers across 40 traditional salt basins known as œillets, this 100g fleur de sel is presented in a striking black ceramic pot with a wooden spoon—a tribute to the island’s ancient monastic roots and the name nigrum monasterium (Latin for “black monastery”), first recorded in 1150.
Collected exclusively by hand using ancestral tools (lousse à fleur), this salt undergoes no washing, no refining, no industrial processing—just sun, sea, and tradition. With a snowy white color and delicate, fine grain, it is the most aesthetic crystal in the 6 Sens collection and a true chef’s favorite.
